Ingredients
  

  • 3 cups all-purpose flour or bread flour
  • 0.5 Tablespoon Kosher salt
  • 0.25 ounce instant or active dry yeast or 2 ¼ teaspoons
  • 1.5 cups warm water about 105°F

Instructions
 

Make dough

  • Place the flour, salt and yeast in a large bowl. Then pour the warm water over top and mix together. The dough should still be somewhat wet and sticky.
  • Cover with a towel or plastic wrap and let rise for 2-10 hours, or overnight.

Shape

  • Wet your hands and turn the dough onto a lightly floured surface. Gently pull the sides up and fold into your preferred shape.
  • Place dough on parchment paper, dust with flour, score the top, and let it rest for 20-30 minutes.

Bake

  • Preheat the oven to 450°F and place a baking stone inside.
  • Slide the dough with parchment onto the hot stone, add steam, and bake for 25-30 minutes until browned.
  • Allow to cool on a cooling rack for at least 30 minutes before slicing.

Notes

If the dough feels too sticky, add more flour and refrigerate it for easier handling. It can rise for up to 12 hours on the counter or a week in the fridge. Store in a brown bag for up to 3 days or freeze for up to 3 months.
