Ingredients
  

Chicken and Coating

  • 1 lb boneless, skinless chicken breasts
  • 1 cup corn starch
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha or to taste
  • 1 tablespoon vegetable oil
  • to taste Salt
  • to taste Pepper

Vegetables and Rice

  • 2 cups cooked rice white or brown
  • 1 cup shredded carrots
  • 1 cup chopped bell peppers any color
  • 1 cup sliced green onions
  • sesame seeds optional for garnish

Cooking Instructions

  • Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  • Place corn starch in a bowl and coat each piece of chicken evenly.
  • In a large skillet, heat vegetable oil over medium-high heat.
  • Add the coated chicken to the skillet and cook until golden brown and cooked through, about 5-7 minutes.
  • In a separate bowl, mix mayonnaise, sweet chili sauce, and sriracha until well combined.
  • Once the chicken is cooked, remove it from the skillet and toss it with the sauce until evenly coated.
  • In serving bowls, layer cooked rice at the bottom.
  • Top the rice with shredded carrots, bell peppers, and green onions.
  • Place the Bang Bang chicken on top of the vegetables.
  • If desired, sprinkle sesame seeds over the top for added crunch.
