Ingredients
  

Sunflower seeds

  • cup sunflower seeds raw or roasted
  • 1 ½ teaspoons maple syrup
  • 1 pinch salt if seeds are unsalted
  • 1 dash cayenne optional

Salad

  • 5 ounces baby spinach roughly chopped
  • 1 ½ cups fresh berries any combination
  • cup crumbled goat cheese more if desired

Balsamic vinaigrette

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon Dijon mustard
  • ½ teaspoon maple syrup
  • salt to taste
  • pepper to taste

Instructions
 

Preparation

  • Warm a small non-stick skillet over medium heat and add the sunflower seeds. Toast the seeds while stirring constantly until lightly golden, about 3 to 5 minutes.
  • In a serving bowl, combine the spinach, berries, crumbled goat cheese, and sunflower seeds.
  • In a small bowl, whisk together the vinaigrette ingredients until well combined. Add salt and pepper to taste.
  • Just before serving, drizzle enough vinaigrette to lightly coat the leaves and gently toss. Serve immediately.

Notes

Make it dairy free/vegan: Omit the goat cheese.
