For the Salad

  • 30 oz canned chickpeas rinsed and drained
  • 1 cup crumbled feta cheese
  • 0.5 cup dried cranberries
  • 0.25 cup chopped fresh parsley
  • 0.25 cup finely chopped red onion
  • 0.25 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 0.5 teaspoon Dijon mustard
  • salt to taste
  • black pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine chickpeas, feta cheese, cranberries, parsley, and red onion.
  • In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
  • Pour the vinaigrette over the chickpea mixture and toss gently to coat all ingredients evenly.
  • Refrigerate for at least 15 minutes to allow flavors to meld before serving.

Notes
