Ingredients

  • ½ each red bell pepper seeded and diced
  • ½ each green bell pepper seeded and diced
  • ½ each yellow onion diced

Dry Ingredients and Seasonings

  • 1 ½ cups long-grain white rice
  • 1 ¼ teaspoons Kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon ground thyme
  • 1 teaspoon ground paprika
  • ¼ teaspoon black pepper
  • 1 each bay leaf

Liquids and Fats

  • cup unsalted butter
  • 3 ¼ cups low-sodium chicken broth

Cooking Instructions

  • In a saucepan over medium-high heat, melt ⅓ cup of unsalted butter. Add the diced red bell pepper, green bell pepper, and yellow onion. Sauté until soft and fragrant, about 5 minutes.
  • Pour in the low-sodium chicken broth, then add the Kosher salt, garlic powder, ground thyme, ground paprika, black pepper, and bay leaf. Stir to combine and bring to a rolling boil.
  • Stir in the long-grain white rice thoroughly. Cover the saucepan with a tight-fitting lid.
  • Reduce heat to low and let the rice simmer gently for 20 to 25 minutes. Avoid lifting the lid.
  • After cooking, remove from heat and let the rice rest, covered, for 10 minutes. Remove the bay leaf and fluff the rice with a fork before serving.

Notes

Use low-sodium chicken broth to control salt levels. Ensure rice is covered with liquid before simmering. Fluff rice gently to keep it light. Pairs well with grilled meats or seafood. Vegetarian option: Substitute vegetable broth.
