Ingredients
  

For the Crust

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • cup vegetable oil
  • 1 large egg
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup hot honey store-bought or homemade
  • 2 tablespoons melted butter

Instructions
 

Prepare the Crust

  • Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  • In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  • In another bowl, mix milk, oil, and egg until combined, then stir into dry ingredients until just moistened.
  • Fold in shredded cheddar cheese, then spoon batter into muffin cups, filling each about ¾ full.
  • Bake for 12-15 minutes until golden and a toothpick inserted comes out clean.
  • Let cool slightly, then drizzle with hot honey and melted butter before serving.

Notes

You can customize the seasonings to taste.
