  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups broccoli florets
  • 2 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon soy sauce or tamari optional

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Add minced garlic and sauté for 1 minute.
  • Add chickpeas and broccoli to the pan.
  • Stir occasionally and cook for about 10 minutes or until broccoli is tender.
  • Season with salt and pepper. Optional: Add soy sauce or tamari for extra flavor.

Notes

Feel free to add more vegetables like bell peppers or carrots. For heat, add crushed red pepper flakes. Pairs well with brown rice or quinoa.
