Ingredients
  

  • 28 to 35 pieces saltine crackers about one sleeve, enough to line your tray
  • 1 cup dark brown sugar firmly packed
  • 1 cup unsalted butter (225g or 2 sticks)
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate (10 to 12 ounces), chopped

Instructions
 

  • Preheat the oven to 400°F. Line a 10x15-inch jelly roll pan with nonstick aluminum foil, and place the saltine crackers in a single layer on the bottom.
  • Place the brown sugar, butter, and salt in a saucepan and cook on medium heat until the butter melts and the mixture comes to a boil. Stir in the vanilla.
  • Pour the hot brown sugar mixture over the saltine crackers and spread to evenly coat.
  • Move the pan to the oven and bake for 5 minutes until bubbly.
  • Melt the chocolate in a microwave-safe bowl, stirring every 30 seconds until fully melted.
  • Remove the pan from the oven, let it cool for 1 minute, then pour the melted chocolate over the crackers and spread evenly.
  • Chill the crackers overnight in the refrigerator.
  • Once cool, remove from the pan and peel away the foil. Cut into snack-sized pieces.

Notes

Optionally, add ½ cup of chopped nuts or coconut flakes on top of the melted chocolate. Storing the candy in an airtight container in the fridge will keep it fresh for about a week.
