Ingredients
  

Cabbage Salad

  • 4 cups green cabbage thinly sliced
  • 2 cups purple cabbage thinly sliced
  • 2 cups grated carrots
  • 1 medium red bell pepper cut into matchsticks
  • 0.5 to 0.67 cup red onion finely chopped
  • 3 cups cooked chicken chopped into cubes
  • 1 pint blueberries
  • 2 medium ripe avocados diced
  • 0.5 medium cucumber cut into thin slices and halved
  • 0.67 cup dried cranberries
  • 0.67 cup sliced almonds

Peanut Dressing

  • 0.5 cup creamy peanut butter
  • 0.25 cup liquid aminos or coconut aminos or low-sodium soy sauce *
  • 0.33 cup rice vinegar
  • 2 tablespoon sesame oil
  • 3 tablespoon avocado oil
  • 1 tablespoon sriracha
  • 1 small clove garlic
  • 2 teaspoon fresh ginger peeled and minced
  • 2 to 4 tablespoon water for thinner consistency

Instructions
 

Prepare the dressing

  • Add all of the ingredients for the dressing to a small bowl and whisk well to combine. Add more water to thin the dressing out if necessary, or do as I do and leave it thick.
  • If you have a small blender such as a magic bullet, you can use it to blend up the dressing.

Make the Salad

  • Thinly slice and chop the green cabbage, red cabbage, bell pepper, and cucumber, and grate the carrots. Transfer all of the salad ingredients to a large bowl.
  • Add your desired amount of dressing and use salad tongs or two large wooden spoons to toss everything together.
  • Serve salad immediately, and enjoy!

Notes

If using soy sauce or liquid aminos, also add 2 tablespoons of pure maple syrup or brown sugar to add sweetness to the dressing. Be sure to use a low-sodium soy sauce so that the dressing doesn’t turn out too salty.
