Ingredients
  

  • 4 cups chopped Persian cucumbers
  • 1 shallot, thinly sliced
  • 1 avocado, peeled, pit removed, then diced
  • ¼ cup fresh dill, finely chopped
  • ½ cup feta cheese, crumbled
  • ¼ cup olive oil For the dressing
  • 2 tablespoons red wine vinegar For the dressing
  • 1 tablespoon lemon juice For the dressing
  • 2 cloves garlic, minced For the dressing
  • Kosher salt to taste
  • freshly cracked black pepper to taste

Instructions
 

  • Place the cucumbers, shallot, avocado, dill and feta cheese in a large bowl.
  • Place the olive oil, red wine vinegar, lemon juice, garlic and salt and pepper in a small bowl. Whisk until combined. Pour the dressing over the vegetables and toss gently to coat. Serve.

Notes

Serve with pita or over salmon. It pairs wonderfully with so much!
