Whisk thoroughly until the mixture is completely smooth and the spices are evenly distributed. Taste the dressing and adjust the salt and pepper to your preference—start with a little, as you can always add more.
  • Pour the curry dressing over the bowl with chicken, grapes, onions, and almonds. Stir gently but thoroughly, ensuring that every bite gets coated with that golden, creamy curry goodness without crushing the grapes.
  • This salad can be enjoyed immediately for maximum freshness, but if you let it chill in the fridge for about 30 minutes, the flavors become even more delicious!
