Ingredients
  

Oils and Fats

  • ½ cup oil
  • cup vegan butter

Vegetables

  • 1 small onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced

Herbs

  • 1.5 tablespoons chopped fresh sage
  • 1.5 tablespoons chopped fresh parsley
  • 1.5 tablespoons chopped fresh rosemary

Bread

  • 6 cups bread cubes

Broth

  • 1.5 to 2 cups chicken or vegetable stock adjust as needed

Eggs

  • 1 large egg

Seasoning

  • Salt to taste

Instructions
 

Preparation

  • Preheat oven to 350°F.
  • Heat oil or vegan butter in a large skillet over medium heat. Add onion, celery and garlic. Sprinkle with salt.
  • Cook over medium-low until tender (do not brown), about 10-12 minutes.
  • Stir in the sage, parsley, and rosemary. Cook for another minute.
  • Place bread cubes in a large bowl. Mix in 1 cup of stock.
  • Pour the onion celery mixture over the bread cubes and toss well to coat.
  • In a small bowl or measuring cup, whisk together the remaining ½ cup stock and eggs. Pour that mixture into the bread cubes and stir and fold the bread cubes until thoroughly combined.
  • Season with salt to taste.
  • Place mixture in a greased casserole dish. Add the remaining half a cup of stock if needed.
  • Cover and bake for 35 minutes. Uncover and bake an additional 10 minutes.
