- ½ cup oil
- ⅔ cup vegan butter
Vegetables
- 1 small onion, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
Herbs
- 1.5 tablespoons chopped fresh sage
- 1.5 tablespoons chopped fresh parsley
- 1.5 tablespoons chopped fresh rosemary
Broth
- 1.5 to 2 cups chicken or vegetable stock adjust as needed
Preparation
Preheat oven to 350°F.
Heat oil or vegan butter in a large skillet over medium heat. Add onion, celery and garlic. Sprinkle with salt.
Cook over medium-low until tender (do not brown), about 10-12 minutes.
Stir in the sage, parsley, and rosemary. Cook for another minute.
Place bread cubes in a large bowl. Mix in 1 cup of stock.
Pour the onion celery mixture over the bread cubes and toss well to coat.
In a small bowl or measuring cup, whisk together the remaining ½ cup stock and eggs. Pour that mixture into the bread cubes and stir and fold the bread cubes until thoroughly combined.
Season with salt to taste.
Place mixture in a greased casserole dish. Add the remaining half a cup of stock if needed.
Cover and bake for 35 minutes. Uncover and bake an additional 10 minutes.
