Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 large eggs
  • 0.75 cups brown sugar
  • 0.5 cups granulated sugar
  • 0.5 cups vegetable oil
  • 0.25 cups unsweetened applesauce
  • 1.5 cups finely grated carrots
  • 8 oz cream cheese for frosting
  • chopped walnuts or pecans optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a large bowl, beat eggs, brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  • Gradually mix dry ingredients into the wet mixture; fold in grated carrots and optional nuts.
  • Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  • For frosting, beat softened cream cheese and butter until creamy; gradually add powdered sugar and vanilla until smooth.
  • Frost cooled bars and cut into squares before serving.
