Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder

Wet Ingredients

  • 1 cup ripe bananas approx 3 medium-large
  • ½ cup peanut butter
  • 2–4 tablespoon maple syrup
  • 1 unit egg
  • 1 teaspoon vanilla

Optional Mix-ins

  • chocolate chips
  • hemp seeds
  • ground flax

Instructions
 

Preparation Steps

  • Mash bananas in a bowl.
  • Add peanut butter, maple syrup and egg and mix well.
  • Stir in oats, cinnamon, baking powder and chocolate chips and mix until combined.
  • Pour into a 8×8 baking pan lined with parchment paper.
  • Bake at 350 for 20-22 minutes.
  • Let cool, cut and serve.

Notes

This recipe is very forgiving. A little extra banana or oats won’t hurt. You can leave out the maple syrup or chocolate chips if you want. Feel free to bake in a 9×9 pan if desired. Bars will just be a bit thinner.
