- 3-4 cups cooked shredded chicken
- 1 medium onion, chopped
- 1 cup sour cream
- ½ cup chopped parsley
- 1 large can enchilada sauce
- 3 cups shredded cheese
- 10-16 pieces flour tortillas
- 1 tablespoon olive oil
Preheat oven to 350ºF.
In a pan, heat olive oil and sauté chopped onions until translucent.
Add shredded chicken and stir to combine.
Mix in enchilada sauce, sour cream, and parsley until well blended.
Stir in 2-2.5 cups of cheese until melted.
Pour some enchilada sauce into a baking dish; fill tortillas with the chicken mixture and roll them up.
Place rolled tortillas seam-side down in the dish, cover with remaining sauce and cheese.
Bake covered for 20-30 minutes; uncover for the last 10 minutes.
