Ingredients
  

  • 3-4 cups cooked shredded chicken
  • 1 medium onion, chopped
  • 1 cup sour cream
  • ½ cup chopped parsley
  • 1 large can enchilada sauce
  • 3 cups shredded cheese
  • 10-16 pieces flour tortillas
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 350ºF.
  • In a pan, heat olive oil and sauté chopped onions until translucent.
  • Add shredded chicken and stir to combine.
  • Mix in enchilada sauce, sour cream, and parsley until well blended.
  • Stir in 2-2.5 cups of cheese until melted.
  • Pour some enchilada sauce into a baking dish; fill tortillas with the chicken mixture and roll them up.
  • Place rolled tortillas seam-side down in the dish, cover with remaining sauce and cheese.
  • Bake covered for 20-30 minutes; uncover for the last 10 minutes.
