Method

  • Heat a generous amount of vegetable oil in a skillet over medium-high heat. Fry the corn tortillas until they turn golden and crispy, about 1-2 minutes per side. Once done, drain them on paper towels to remove excess oil.
  • In the same skillet, add diced rotisserie chicken along with taco seasoning. Sauté over medium heat until heated through, about 3-4 minutes. Transfer the flavorful chicken to a bowl.
  • In the same skillet, combine black beans, chopped cilantro, and your favorite salsa. Cook over medium heat, stirring occasionally, until the mixture thickens slightly, about 5-7 minutes.
  • Taking a crispy tortilla, spread a layer of the black bean mixture first. Top it with the sautéed chicken, chopped tomatoes, shredded lettuce, cilantro, and crumbled queso fresco for a delightful burst of flavor.
  • Drizzle with sour cream and any additional toppings like sliced jalapeños or avocados that you adore. Serve immediately for the best crunch!
