Ingredients
  

Dough

  • 1 package rolled pie crust (7.5 oz pack)
  • 1 cup jam or preserves plus 2 Tablespoons
  • 1 large egg

Icing

  • 1 cup powdered sugar
  • 2-3 Tablespoons milk or cream
  • 2 Tablespoons jam
  • ½ teaspoon vanilla

Instructions
 

Preparation

  • Preheat oven to 400°F.
  • Lay a sheet of parchment on a baking sheet and unroll crust onto another sheet of parchment. Cut rectangles, approximately 3 in by 5 in, from each crust. Knead and roll out remaining crust to cut additional rectangles.
  • Beat the egg for the egg wash. Lay out rectangles on the parchment lined baking sheet. Add 1 ½ Tablespoons of jam, brush edges with egg wash, and place another rectangle on top. Pinch and crimp edges, poke holes in the top, and brush with egg wash.
  • Continue with remaining pop tarts. Bake for 12-15 minutes or until golden brown.
  • Once cooled, whisk together icing ingredients and spread over each pop tart. Add toppings as desired or enjoy plain. Store in an airtight container for up to 2 days, best enjoyed fresh.

Notes

You can use various jams for the filling, such as strawberry, blackberry, or raspberry. Be careful not to overfill to maintain a nice appearance.
