Ingredients
  

  • 2 cans (15 oz each) pinto beans or 3 cups cooked dry beans
  • ½ cup bean liquid reserved from the can or cooking pot
  • 2 tablespoons vegetable oil or lard
  • ½ small white onion finely diced
  • 2 cloves garlic minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon chili powder
  • ½ teaspoon fine sea salt adjust to taste
  • ¼ cup crumbled cotija cheese or feta
  • toppings Fresh cilantro, diced tomatoes, and sliced jalapeños.

Instructions
 

  • Drain the liquid from the pinto beans without pouring the liquid down the drain. Set aside at least half a cup of this liquid and rinse the beans under cold water.
  • Heat vegetable oil or lard in a large skillet over medium heat. Cook the diced onion for about 5-7 minutes until golden brown and soft.
  • Add minced garlic and cook for 1 more minute.
  • Stir in ground cumin, chili powder, and salt. Cook for about 30 seconds.
  • Add the drained pinto beans to the skillet and fry undisturbed for about 3 minutes.
  • Lower the heat to medium-low and add half of the reserved bean liquid. Mash the beans with a potato masher.
  • Adjust the texture by adding more reserved liquid if beans are too dry or stiff.
  • Stir in half of the crumbled cotija cheese and adjust seasoning with salt or fresh lime juice if desired.
  • Scoop beans into a serving bowl, garnish with remaining cotija cheese, cilantro, and diced tomatoes, and serve hot.
