Ingredients
  

For the Crust

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 2 cups fresh spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • salt and black pepper to taste
  • toothpicks for securing

Instructions
 

Prepare the Crust

  • Preheat oven to 375°F (190°C).
  • Place each chicken breast between plastic wrap and pound to an even ¼-inch thickness.
  • In a bowl, combine feta, spinach, sun-dried tomatoes, garlic, oregano, salt, and pepper.
  • Spread the mixture evenly over each chicken breast, then roll tightly and secure with toothpicks.
  • Brush the outside of each roll with olive oil and season with additional salt and pepper if desired.
  • Place in a baking dish and bake for 25-30 minutes, or until chicken is cooked through and juices run clear.
  • Let rest for 5 minutes before slicing and serving.
