Ingredients
  

Onion Mixture

  • 2 tablespoons olive oil
  • 2 pounds yellow onions, thinly sliced
  • teaspoon baking soda

Meatloaf Mixture

  • ½ cup unseasoned dried breadcrumbs
  • ½ cup whole or 2% milk
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • 1 ½ teaspoons kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 pounds ground beef, veal, pork, or blend
  • 2 large eggs, lightly beaten
  • 1 cup shredded Gruyère cheese (about 3 ounces)

Instructions
 

Preparation

  • Arrange a rack in the middle of the oven and heat to 350°F. Line a 9x5-inch loaf pan with aluminum foil.
  • Heat the oil in a large pot over medium-high heat until shimmering. Add the onions and baking soda and cook, stirring every few minutes for 15 minutes, then continue cooking until the onions are a deep golden-brown, about 10 to 15 more minutes.
  • Place the breadcrumbs in a large bowl, pour in the milk, and stir to combine. Add the caramelized onions, garlic, Worcestershire, salt, and pepper; stir to combine.
  • Add the ground meat and eggs, and combine gently. Transfer the mixture to the prepared pan and press down into an even layer.

Cooking

  • Bake until the middle of the loaf registers at least 165°F on an instant-read thermometer, 55 to 60 minutes.
  • Remove the meatloaf from the oven and set to broil. Sprinkle reserved caramelized onions and Gruyère over the top. Broil until the cheese is bubbly and browned, about 2 minutes.
  • Let the meatloaf cool in the pan for 15 minutes, remove, drain off excess grease, slice, and serve.
