- 4 pieces boneless, skinless chicken breasts
Mushrooms
- 14 oz. baby bella mushrooms divided
Vegetables
- ½ cup white onion diced
- 2 cloves garlic minced
Cheese
- 2 cups Gouda cheese shredded, divided
Oils
- 5 Tbsp. olive oil divided
Herbs and Spices
- 1 Tbsp. dried parsley
- ¾ tsp. dried thyme
- ½ tsp. salt
- ⅛ tsp. ground black pepper
Cooking Instructions
Preheat your oven to 400°F.
Prepare mushrooms by chopping 10 oz. and slicing the remaining 4 oz. Set aside.
Slice pockets into each chicken breast without cutting all the way through.
In a skillet over medium heat, sauté chopped mushrooms in olive oil for about 5 minutes until tender.
Add diced onions and seasonings; sauté for another 4 minutes.
Mix sautéed ingredients with 1 cup of Gouda cheese in a bowl.
Lightly brown each chicken breast in the same skillet for about 2 minutes per side.
Stuff chicken with the mushroom mixture and place in a baking dish.
Bake for approximately 50 minutes until fully cooked.
Top with remaining Gouda and sliced mushrooms; bake again for 7-10 minutes until cheese is melted.
