Ingredients
  

Poultry

  • 4 pieces boneless, skinless chicken breasts

Mushrooms

  • 14 oz. baby bella mushrooms divided

Vegetables

  • ½ cup white onion diced
  • 2 cloves garlic minced

Cheese

  • 2 cups Gouda cheese shredded, divided

Oils

  • 5 Tbsp. olive oil divided

Herbs and Spices

  • 1 Tbsp. dried parsley
  • ¾ tsp. dried thyme
  • ½ tsp. salt
  • tsp. ground black pepper

Instructions
 

Cooking Instructions

  • Preheat your oven to 400°F.
  • Prepare mushrooms by chopping 10 oz. and slicing the remaining 4 oz. Set aside.
  • Slice pockets into each chicken breast without cutting all the way through.
  • In a skillet over medium heat, sauté chopped mushrooms in olive oil for about 5 minutes until tender.
  • Add diced onions and seasonings; sauté for another 4 minutes.
  • Mix sautéed ingredients with 1 cup of Gouda cheese in a bowl.
  • Lightly brown each chicken breast in the same skillet for about 2 minutes per side.
  • Stuff chicken with the mushroom mixture and place in a baking dish.
  • Bake for approximately 50 minutes until fully cooked.
  • Top with remaining Gouda and sliced mushrooms; bake again for 7-10 minutes until cheese is melted.
