- 2 tablespoons lemon juice Lime juice can be swapped for a tropical twist.
- 1 teaspoon ground ginger Fresh ginger can be used for stronger flavor.
- 1 teaspoon kosher salt Sea salt can also be used.
- ½ teaspoon freshly ground black pepper Pre-ground will work if fresh is not available.
For the Pineapple
- 1 whole fresh pineapple Can use canned pineapple, just drain well.

Cooking Instructions
In a large zip-top bag, combine the chicken, ketchup, soy sauce, brown sugar, avocado oil, lemon juice, ginger, salt, and pepper. Close the bag tightly and mix well.
Place the bag in the refrigerator and let the chicken marinate for at least 30 minutes.
Fire up your grill to medium-high heat and lightly oil the grates.
Dunk the pineapple spears into the remaining marinade before grilling.
Grill the chicken for about 5 minutes on one side, then flip and cook an additional 4-5 minutes until fully cooked.
Grill the pineapple until caramelized, rotating occasionally.
Serve the grilled chicken and pineapple on a platter, garnished with green onions.
