Ingredients
  

For the Chicken

  • 4 pieces boneless skinless chicken breasts Use thighs for extra juiciness.
  • ½ cup ketchup Barbecue sauce can be used instead.
  • ¼ cup reduced sodium soy sauce Low-sodium versions recommended.
  • ¼ cup light brown sugar Coconut sugar can be a substitute.
  • 3 tablespoons avocado oil Olive oil can be used as an alternative.
  • 2 tablespoons lemon juice Lime juice can be swapped for a tropical twist.
  • 1 teaspoon ground ginger Fresh ginger can be used for stronger flavor.
  • 1 teaspoon kosher salt Sea salt can also be used.
  • ½ teaspoon freshly ground black pepper Pre-ground will work if fresh is not available.

For the Pineapple

  • 1 whole fresh pineapple Can use canned pineapple, just drain well.
  • 4 stalks thinly sliced green onions Cilantro can be used for a different flavor.

Cooking Instructions

  • In a large zip-top bag, combine the chicken, ketchup, soy sauce, brown sugar, avocado oil, lemon juice, ginger, salt, and pepper. Close the bag tightly and mix well.
  • Place the bag in the refrigerator and let the chicken marinate for at least 30 minutes.
  • Fire up your grill to medium-high heat and lightly oil the grates.
  • Dunk the pineapple spears into the remaining marinade before grilling.
  • Grill the chicken for about 5 minutes on one side, then flip and cook an additional 4-5 minutes until fully cooked.
  • Grill the pineapple until caramelized, rotating occasionally.
  • Serve the grilled chicken and pineapple on a platter, garnished with green onions.
