  • 0.5 tablespoon mild olive oil
  • 0.25 cup minced yellow or white onion about ⅓ of a small onion
  • 0.75 pound ground beef 90 to 95 percent lean
  • 2.5 teaspoons ground beef seasoning
  • 8 ounces full-fat block cream cheese softened
  • 0.75 cup full-fat sour cream
  • 2 large garlic cloves peeled and minced or pressed
  • 0.75 cup grated cheddar cheese
  • 2 tablespoons hot sauce such as Louisiana hot sauce
  • 2 scallions finely chopped

  • Heat the oven to 325 degrees F.
  • Heat the oil in a cast iron pan until shimmering, then sauté the onion until starting to soften.
  • Add the beef and the ground beef seasoning and cook until the meat is no longer pink. Take off the heat and set aside.
  • In a mixing bowl, whip cream cheese and sour cream until smooth. Stir in garlic, cheddar, hot sauce, and scallion.
  • Using a slotted spoon, transfer the cooked beef to the mix and stir in until well combined.
  • Transfer to the baking dish(es) and bake, uncovered, until hot (15 to 20 minutes). Serve hot with chips and/or vegetables, like celery and carrot sticks.

Notes

Please don't use any reduced-fat cream cheese, cheddar cheese, or sour cream products; those won't melt properly and may separate during baking. For a spicier dip, add 1 to 3 additional teaspoons of hot sauce. Store any leftover dip in an airtight container in the fridge for up to 2 days. Prepare the dip up to 24 hours ahead but don't bake it yet. Bake when ready.
