Protein

  • 1 lb ground beef 85% lean recommended

Vegetables

  • 2 medium zucchinis diced
  • 1 large sweet potato peeled and cubed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • fresh parsley chopped, for garnish

Spices

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • salt to taste
  • black pepper to taste

  • 2 tablespoon olive oil

Instructions
 

Cooking Steps

  • Heat olive oil in a large skillet over medium. Add onion and garlic; sauté 2–3 minutes until fragrant and lightly golden.
  • Add ground beef; cook 5–7 minutes, breaking up lumps, until browned. Drain excess fat if needed.
  • Stir in sweet potato cubes and sprinkle with smoked paprika, oregano, salt, and pepper. Cover skillet and cook 10 minutes, stirring now and then, until potatoes are tender.
  • Uncover, add zucchini, and cook 5 more minutes, stirring occasionally to soften but retain texture.
  • Remove skillet from heat, taste and adjust seasoning. Sprinkle with fresh parsley and serve warm—straight from the pan or portioned over rice, quinoa, or greens.

Notes

Tip: Swap sweet potatoes for regular potatoes, or include bell peppers for extra color.
