  • 2 breasts boneless, skinless chicken
  • ¼ cup honey
  • 2 limes juiced and zested
  • 2 cloves garlic minced
  • 1 cup cooked white rice
  • 1 ripe avocado diced
  • ¼ cup chopped cilantro
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

  • Whisk together honey, lime juice, lime zest, minced garlic, salt, and pepper. Marinate chicken in half of the mixture for 15 minutes.
  • Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice.
  • Combine cooked rice, diced avocado, cilantro, and the remaining honey lime marinade. Mix gently.
  • Layer avocado rice in serving bowls, top with sliced chicken, and garnish with extra cilantro if desired.
