Ingredients

For the Batter

  • 1 cup All-purpose flour Swap with gluten-free flour for a gluten-free treat.
  • ½ cup Unsweetened cocoa powder Consider carob powder as an alternative if needed.
  • ¾ cup Granulated sugar Brown sugar adds a lovely depth of flavor.
  • 1 tablespoon Baking powder Skip only if using self-rising flour.
  • ½ teaspoon Baking soda Don't adjust without making other changes.
  • ¼ teaspoon Salt A pinch of kosher salt can elevate taste.
  • 1 cup Buttermilk Mix milk with ½ tablespoon vinegar to create a suitable substitute.
  • ¼ cup Vegetable oil Melted coconut oil or butter are great alternatives.
  • 1 large Large egg A flax egg works well for a vegan option.
  • 1 teaspoon Vanilla extract Fresh vanilla or vanilla bean paste can be delightful substitutes.
  • 1 cup Fresh raspberries Frozen raspberries can work, just be aware of extra moisture.

For the Chocolate Glaze

  • 1 cup Semi-sweet chocolate chips Use dark or milk chocolate for varying sweetness.
  • 2 tablespoon Coconut oil or butter Choose based on your flavor preferences.

Instructions

Directions

  • Preheat the Oven: Set your oven to 350°F (175°C) and grease a donut pan to prevent sticking.
  • Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  • Combine Wet Ingredients: In a separate mixing bowl, combine the buttermilk, vegetable oil, egg, and vanilla extract. Mix until everything is smooth and blended.
  • Combine Mixtures: Gently fold the wet mixture into the dry ingredients until just blended. After that, delicately fold in the fresh raspberries.
  • Fill the Pan: Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
  • Bake Donuts: Place the pan in the oven and bake the donuts for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the Donuts: Allow the baked donuts to cool in the pan for about 5 minutes before transferring them to a wire rack.
  • Make the Glaze: For the chocolate glaze, melt the semi-sweet chocolate chips and coconut oil in a microwave-safe bowl, using 30-second intervals and stirring until smooth.
  • Glaze the Donuts: Dip the tops of the cooled donuts into the melted chocolate glaze, allowing any excess to drip off.
  • Serve and Enjoy: Serve your donuts warm or at room temperature.
