Ingredients
  

For the Pork Belly

  • 2 pounds Pork Belly thick-cut, skin-on

For the Marinade

  • 0.5 cups Bourbon Whiskey or brewed black tea or beef broth with vanilla extract
  • 0.5 cups Brown Sugar packed
  • 0.25 cups Maple Syrup
  • 0.25 cups Soy Sauce
  • 4 cloves Garlic minced, no substitutes necessary
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Salt adjust to taste

For Serving

  • 1 cup BBQ Sauce optional, choose your favorite variety

Instructions
 

Preparation

  • Trim any excess fat from the pork belly and cut it into 1.5-inch cubes.
  • In a bowl, whisk together the bourbon, brown sugar, maple syrup, soy sauce, minced garlic, smoked paprika, black pepper, and salt until well blended.
  • Place the pork belly cubes in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for 8-12 hours.
  • Preheat your smoker or grill to 275°F (135°C). Arrange the marinated pork belly pieces on the grill or smoker and cook for about 2.5 to 3 hours.
  • After cooking, allow the pork belly to rest for at least 10 minutes before serving.
  • Optionally, brush with BBQ sauce just before serving.

Notes

Serve with creamy potato salad or tangy coleslaw for a complete meal.
