Equipment

  • grill
  • medium bowl
  • resealable plastic bag
  • meat thermometer

Ingredients

For the Marinade

  • 4 pieces Boneless, skinless chicken breasts
  • ¼ cup Fresh lime juice
  • ¼ cup Fresh orange juice
  • ¼ cup Pineapple juice
  • 2 tablespoons Olive oil
  • 2 tablespoons Honey
  • 2 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ teaspoon Red pepper flakes optional
  • 1 tablespoon Fresh cilantro for garnish

Instructions

How to Make

  • In a medium bowl, whisk together the fresh lime juice, orange juice, pineapple juice, olive oil, honey, minced garlic, grated ginger, salt, black pepper, and optional red pepper flakes until well combined and slightly thickened.
  • Place your boneless, skinless chicken breasts into a resealable plastic bag or shallow dish. Pour the vibrant marinade over the chicken, ensuring each piece is completely coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  • Preheat your grill to medium-high heat.
  • Take the marinated chicken out of the fridge, letting any excess marinade drip off before discarding the remaining marinade.
  • Place the chicken on the hot grill and cook for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  • Once cooked, remove the chicken from the grill and let it rest for about 5 minutes.
  • Transfer your grilled chicken to a serving platter, sprinkle with fresh cilantro for a pop of color, and serve.

Notes

For best flavor, marinate the chicken overnight.
