Ingredients
  

Roasted Chickpeas

  • 1 15 oz can chickpeas, drained and rinsed
  • 1 tablespoon avocado oil
  • ½ teaspoon ground coriander
  • ½ teaspoon sumac
  • Kosher salt to taste
  • Black pepper to taste

Glazed Carrots

  • 2 lbs carrots, peeled and trimmed
  • 3 tablespoon avocado oil
  • ½ teaspoon ground coriander
  • ½ teaspoon sumac
  • 10 leaves sage
  • 3 cloves garlic, thinly sliced
  • ¼ cup pistachios, chopped
  • 3 tablespoon maple syrup
  • Juice of half a lemon

Lemon Tahini Yogurt Sauce

  • 4 tablespoon thick unsweetened plant based yogurt
  • 2 tablespoon good quality tahini
  • 1 clove garlic, grated
  • Juice and zest of half a lemon
  • 2 teaspoon maple syrup

Instructions
 

Roasting Chickpeas

  • Preheat the oven to 425F. Pat chickpeas dry and spread on a parchment lined baking sheet. Bake for 10 minutes. Remove, add oil, coriander, sumac, salt and pepper, toss to coat, and roast for another 20-25 minutes.
  • For carrots, ensure they are cut to about ½ inch thick. Place on another baking sheet; drizzle with 1 ½ tablespoon oil, coriander, sumac, salt and pepper. Toss and bake for 30 minutes, tossing after 20 minutes.

Finishing Touches

  • In a small saute pan over medium low heat, heat remaining oil and add sage leaves for 1 minute. Drain on paper towel.
  • Add garlic to the oil and cook until golden. Add pistachios and saute for 1 minute. Stir in maple syrup, simmer and remove from heat, adding lemon juice.
  • Pour maple pistachio mixture over roasted carrots, tossing to evenly coat.
  • Prepare yogurt sauce by whisking yogurt, tahini, garlic, lemon juice/zest, sumac and salt until smooth.
  • To assemble, smear yogurt sauce on a platter, arrange carrots and chickpeas on top. Spoon more glaze over and top with crispy sage.

Notes

Save some time by making the yogurt sauce in advance. Adjust seasonings to your taste.
