Ingredients
  

  • 1 large cucumber diced
  • 10 plum tomatoes sliced
  • ½ small red onion sliced
  • 2 medium radishes thinly sliced
  • ½ cup canned chickpeas rinsed and drained
  • ½ cup taggiasca olives
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 8-10 fresh basil leaves

Instructions
 

  • In a large salad bowl, combine the diced cucumber, tomatoes, red onion, radishes, chickpeas and olives.
  • Pour the olive oil and lemon juice over the veggies, add the salt and pepper and toss gently to combine.
  • Adjust the seasoning to taste, garnish with fresh basil leaves and serve immediately.

Notes

If your cucumbers have a thick skin, peel some or all of it. Let the salad sit for 10-15 minutes before serving for the best taste.
