  • 1 pound salmon fillet, skin removed

Pasta

  • 12 oz rigatoni (or your preferred pasta)

Vegetables

  • 4 cups baby spinach leaves

  • ½ cup Greek yogurt

Spices

  • 2 teaspoons dried dill
  • red pepper flakes
  • salt
  • black pepper

Fruit

  • 1 lemon, zest and juice

Cooking Instructions

  • Preheat oven to 400°F.
  • Place salmon on a lined baking sheet; season with dill, lemon zest, salt, and pepper. Bake for 7-10 minutes until opaque.
  • Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  • In the same pot, add spinach to drained pasta over low heat until wilted. Mix in Greek yogurt, lemon juice, and red pepper flakes, using reserved water to adjust creaminess.
  • Gently fold in salmon chunks. Serve immediately.
