Marinade
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon maple syrup or brown sugar
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 cloves crushed garlic
- ½ teaspoon kosher salt
- 2 teaspoons Tajin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 4 fillets salmon 4-6 ounces each
Mango Salsa
- 1 large ripe avocado diced
- 1 large mango diced
- ½ red bell pepper diced
- 2 tablespoons cilantro finely chopped
- ½ jalapeño seeded and minced
- ¼ cup red onion finely diced
- 2 tablespoons lime juice
- ½ teaspoon kosher salt plus more to taste
Preparation
In a large bowl, whisk together soy sauce, olive oil, maple syrup, lime juice, garlic, and spices. Add salmon fillets and coat well. Marinate for at least 20 minutes.
While the salmon marinates, prepare the mango salsa by mixing diced avocado, mango, bell pepper, cilantro, jalapeño, lime juice, and salt in a separate bowl.
Preheat your grill to medium-high heat (400-450°F). Brush grill grates with oil.
Grill salmon fillets for about 8 minutes or until they flake easily with a fork.
Serve the grilled salmon topped with mango salsa.
