Chicken Thighs

  • 6 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • ½ cup fig jam use high-quality for best flavor
  • 2 tablespoons chicken broth
  • 4 ounces goat cheese crumbled
  • 1 tablespoon fresh parsley chopped

Cooking Instructions

  • Season chicken thighs with garlic powder, onion powder, thyme, salt, and black pepper.
  • Heat olive oil in a skillet over medium-high heat and sear chicken for 2 minutes per side until lightly golden.
  • Transfer chicken thighs to the slow cooker.
  • Mix fig jam and chicken broth in a bowl, then pour over chicken.
  • Cover and cook on low for 4–5 hours or high for 2–3 hours until tender.
  • Add goat cheese during the last 10 minutes of cooking and let it melt slightly.
  • Garnish with fresh parsley and serve warm.

Notes

Do not skip searing—it adds depth to the dish. Pairs well with rice, mashed potatoes, or crusty bread. Leftovers store well for up to 4 days in the refrigerator.
