  • 2 medium cucumbers
  • 2 tablespoons chili oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • Salt, to taste
  • 1 tablespoon sesame seeds optional
  • Fresh cilantro or scallions for garnish

  • Prepare the Cucumbers: Rinse the cucumbers under cold water. Cut off the ends and slice them in half lengthwise.
  • Smash the Cucumbers: Place the halved cucumbers on a cutting board. Using the flat side of a knife or a rolling pin, gently smash the cucumbers until they break apart but remain in chunks.
  • Salt the Cucumbers: Sprinkle salt over the smashed cucumbers. Let them sit for about 5 minutes to draw out excess moisture.
  • Make the Dressing: In a small bowl, combine the chili oil, soy sauce, rice vinegar, sugar, minced garlic, and sesame oil. Whisk until well combined.
  • Drain the Cucumbers: After letting the cucumbers sit, drain any excess liquid that has accumulated.
  • Combine the Ingredients: In a mixing bowl, add the smashed cucumbers and pour the dressing over them. Toss gently to coat all pieces evenly.
  • Garnish: Sprinkle sesame seeds over the top and garnish with fresh cilantro or scallions if desired.
  • Let It Rest: Allow the salad to sit for 5-10 minutes before serving to let the flavors meld together.
  • Serve: Enjoy the salad fresh, or refrigerate it for a short while if you prefer it chilled.

This salad is best served fresh but can be chilled briefly before serving.
