Ingredients
  

For the Crust

  • 2 cups grated carrots
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 cup mascarpone cheese
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 12 pieces pre-made cannoli shells or pastry cups
  • ¼ cup chopped pistachios for garnish

Preparation

  • In a saucepan, combine grated carrots, granulated sugar, cinnamon, nutmeg, and ginger. Cook over medium heat for 10-12 minutes until carrots are soft and mixture thickens. Let cool completely.
  • In a bowl, mix mascarpone, powdered sugar, and vanilla extract until smooth and creamy.
  • Fill each cannoli shell or pastry cup with a layer of the spiced carrot mixture.
  • Top each cup with a dollop of the mascarpone mixture.
  • Garnish with chopped pistachios and serve immediately or chill until ready to serve.
