  • 2 medium eggplant firm and glossy varieties
  • 1 teaspoon salt to draw out moisture

For the Sauce

  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup adjust to taste
  • 4 cloves minced garlic freshly minced
  • 2 tablespoons rice vinegar

For Cooking

  • ½ cup vegetable oil for frying

For Garnish

  • 2 tablespoons toasted sesame seeds optional but recommended

Preparation Steps

  • Slice the eggplant into bite-sized pieces and sprinkle with salt. Let sit for 20 minutes to draw out moisture.
  • Rinse the eggplant under cold water to remove salt and bitterness, then pat dry with paper towels.
  • In a mixing bowl, whisk together low-sodium soy sauce, honey or maple syrup, minced garlic, and rice vinegar until smooth.
  • Heat vegetable oil in a skillet over medium-high heat and fry eggplant slices in batches until golden brown and crispy.
  • Lower the heat and add the sauce to the skillet, tossing the eggplant to coat evenly and simmer for 3-5 minutes.
  • Remove from heat, garnish with toasted sesame seeds, and serve hot.
