Ingredients
  

  • 1 large French baguette
  • 2 cups fresh strawberries, hulled and diced
  • 1 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil for coating bread and drizzling
  • 1 tablespoon balsamic glaze plus more for drizzling
  • ¼ cup fresh basil leaves, thinly sliced reserved for garnish
  • ½ teaspoon cracked black pepper
  • 1 clove garlic, peeled

Instructions
 

Preparation

  • Slice the loaf into ½ inch thick slices on a diagonal.
  • Preheat oven to 400°F. Arrange bread slices on a baking sheet and brush with olive oil.
  • Toast in the oven for 5-8 minutes until golden brown.
  • Rub the garlic clove over the toasted bread.
  • Wash and dice strawberries into small cubes. Place in a medium bowl.
  • Add balsamic glaze and cracked black pepper to the strawberries, gently stir.
  • Crumble feta cheese and fold it into the strawberry mixture.
  • Slice fresh basil leaves into thin ribbons and mix into the strawberry and feta mix.
  • Mound the strawberry and feta mixture onto each slice of toasted bread.
  • Drizzle with additional balsamic glaze and garnish with remaining basil.

Notes

Serve immediately while the bread is warm and toppings are fresh.
