Ingredients
  

  • 1 medium lime juice and zest
  • 1.5 teaspoons honey or maple syrup
  • 1 pinch fine sea salt
  • 1 pint strawberries hulled and diced
  • 1 whole jalapeño pepper seeded and chopped
  • 0.5 small red onion chopped
  • 0.5 cup fresh cilantro chopped
  • to taste freshly ground black pepper
  • chips for serving

Instructions
 

  • In a large bowl, whisk together the lime juice and zest, honey and salt. Stir in the strawberries, jalapeño, onion and cilantro. Add pepper, to taste, and mix well. Adjust the seasonings if need be.
  • If your strawberries are nice and juicy, you can serve immediately with chips. Otherwise, let the salsa marinate for about 30 minutes.
  • Store leftovers in an airtight container in the fridge for up to 3 days.

Notes

Make it vegan by using maple syrup instead of honey. When chopping cilantro, there's no need to separate the leaves from the tender stems.
