Ingredients
  

Udon Soup

  • 1 cups Dashi Use instant Dashi or make from scratch.
  • 1 tablespoon Soy Sauce Can substitute with coconut aminos.
  • 1 tablespoon Mirin Substitute with 1 tablespoon dry sherry + 1 teaspoon sugar if unavailable.

Udon & Toppings

  • 1 packets Pre made Udon Noodle About 4 oz (120 g).
  • 2 Tempura Shrimp Cooking time not included.
  • 2 slices Naruto Fish Cake Optional, can substitute with crab sticks.
  • 1 tablespoon Chopped Shallots To garnish.
  • Shichimi Togarashi Optional garnish.

Instructions
 

Udon Soup

  • Heat Dashi in a saucepan over medium heat and add soy sauce and mirin.
  • Bring to boil, then turn the heat off and set the soup aside.

Udon Noodle

  • Boil enough water in a large pot and add the Udon noodles. Cook according to packet's instructions.
  • Drain the cooked udon noodles and serve into two bowls.
  • Pour the Udon soup over the udon.
  • Top with 2 Tempura shrimps and 2 slices of Naruto fish cake.
  • Garnish with chopped shallots and sprinkle a bit of shichimi togarashi if desired.

Notes

Dashi can be made from scratch or using instant powders. When substituting ingredients, adjust to taste and availability.
