Equipment

  • pan

Ingredients

Group Name

  • 1 Tablespoon sesame oil
  • 0.25 cup onion diced I used yellow. White onion works too.
  • 2 cloves garlic
  • 1 Tablespoon fresh minced ginger or ginger paste
  • 10 oz ground chicken
  • 0.25 cup Tamari (low sodium) or soy sauce or coconut aminos
  • 2 Tablespoon Thai sweet red chili sauce we love Trader Joe's
  • 1 juice of lime
  • 1 teaspoon maple syrup or honey or agave
  • 0.33 cup cashews chopped raw or roasted/salted
  • 0.25 cup scallions chopped
  • 0.25 cup cilantro fresh, chopped
  • 0.25-0.5 cup carrots shredded
  • Sesame seeds for topping
  • 1 head butter lettuce leaves removed rinsed and dried - see notes

Instructions

Group Name

  • Heat up a pan to medium high heat and add the sesame oil. Once the oil is hot, add in the onions and cook for 2-3 minutes until they start to brown and turn translucent. Then add in the garlic and ginger, cooking for another 2 minutes.
  • Add the ground chicken to the pan, breaking it up and seasoning with salt and pepper. Cook until the chicken turns golden brown and is no longer pink, about 3-4 minutes.
  • In a small bowl, mix together the soy sauce, chili sauce, lime juice, and honey.
  • Pour the sauce over the chicken and add the chopped cashews. Toss everything together and reduce heat to low. Cook for an additional 2 minutes. Remove from heat and stir in the carrots, scallions, and cilantro.
  • To assemble the wraps, open a lettuce leaf and add a large spoonful of the chicken mixture. Top with pan sauce and sesame seeds. Repeat until all wraps are made.

Notes

Nutritional information is approximate and will vary based on the amount of filling in the wraps. To prepare the lettuce, carefully tear leaves away from the bulb and rinse under running water. Dry on a paper towel before using.
