Ingredients
  

Peanut Sauce

  • 0.5 cup creamy peanut butter
  • 1 cup unsweetened, full-fat coconut milk stirred well
  • 2 tablespoons fresh lime juice juice from approximately 1 medium lime
  • 2 tablespoons soy sauce or fish sauce
  • 1.5 tablespoons brown sugar dark preferred
  • 1 teaspoon ground ginger
  • 1 tablespoon minced fresh garlic approximately 3 large cloves
  • 0.5 teaspoon crushed red pepper flakes plus more to taste

Chicken

  • 2 pounds boneless, skinless chicken thighs cut into bite-sized chunks

Serving Suggestions

  • 1 cup prepared peanut sauce made from ingredients listed above
  • lime wedges to garnish

Instructions
 

Peanut Sauce

  • Add peanut butter, coconut milk, lime juice, soy sauce, brown sugar, ginger, garlic, and red pepper flakes to a medium bowl. Whisk until fully combined.
  • Transfer 1 cup of prepared sauce to a small bowl, cover, and refrigerate. Save remaining sauce for marinating chicken.
  • Let refrigerated sauce come to room temperature 15 minutes prior to serving.

Marinate Chicken

  • Place chicken thighs in a baking dish.
  • Pour remaining peanut sauce over chicken and toss until fully coated.
  • Cover with plastic wrap and refrigerate for at least 1 hour.
  • If using skewers, thread marinated chicken onto them after marinating.
  • Place chicken on a greased baking sheet.

Broil Chicken

  • Preheat broiler to high. Broil chicken for 6 minutes, or until internal temperature reaches 160°F.
  • Let chicken rest for 5 minutes before serving.

Grill Chicken

  • Preheat grill to medium-high, around 375°F to 450°F.
  • Grill chicken skewers for 6 minutes, flip and grill another 6 to 10 minutes until internal temperature reaches 160°F.
  • Let skewers rest for 5 minutes before serving.

Serve

  • Transfer chicken to serving plates and serve with rice, peanut sauce, and lime wedges.
  • Garnish with peanuts, green onions, and cilantro if desired.

Notes

For skewered service, divide skewers onto plates or transfer to a platter. Use gluten-free options for dietary needs. Substitute peanut butter for other nut butters for alternative diets.
