- 3 ounces pureed watermelon juice strained through a sieve
- 1.5 cups vanilla ice cream
- 2 cups frozen seedless watermelon chunks
- 1 tablespoon sugar optional depending on the sweetness of your watermelon
- ¼ teaspoon vanilla
- splash of lemon juice
- pinch of salt
Combine all the ingredients in a blender (in the order listed); blend until smooth and ultra creamy, pushing down the frozen watermelon chunks if necessary, about 2 minutes.
Freeze the mixture for about 40 minutes (or until firm, but not completely solid), then transfer to a piping bag with a 1M 'star' tip.
Swirl into dessert glasses. Sprinkle with some mini chocolate chips.
To help the soft-serve hold its shape longer, freeze the swirled whip another 20-30 minutes.
