Ingredients
  

Honey-Lime Dressing

  • 2 tablespoons honey quality honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons extra virgin olive oil quality olive oil
  • 1 pinch salt

Watermelon Salad

  • ½ whole watermelon peeled, cut into cubes
  • 1 whole English cucumber cubed, about 2 cupfuls
  • 15 leaves fresh mint chopped
  • 15 leaves fresh basil chopped
  • ½ cup crumbled feta cheese more to your liking

Instructions
 

Preparation

  • In a small bowl, whisk together the honey, lime juice, olive oil and pinch of salt. Set aside for a moment.
  • In a large bowl or serving platter, combine the watermelon, cucumbers, and fresh herbs.
  • Top the watermelon salad with the dressing and gently toss to combine. Top with the feta cheese and serve!

Notes

You can add shallots or red onions, avocado cubes, or hot peppers. Store leftovers in a tight-lid glass container for a night or two. It's best consumed on the same day prepared.
