Carrots

  • 1 pound carrots, peeled and cut into sticks

Whipped Feta

  • 4 ounces feta cheese
  • ¼ cup Greek yogurt
  • 1 tablespoon lemon juice
  • Fresh herbs (e.g., parsley or cilantro) for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the carrot sticks with olive oil, harissa paste, salt, and pepper until evenly coated.
  • Spread the carrots on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until they are tender and caramelized, turning halfway through.
  • While the carrots are roasting, combine feta cheese, Greek yogurt, lemon juice, and a pinch of salt in a food processor. Blend until smooth and creamy.
  • Once the carrots are done, remove them from the oven and let them cool slightly.
  • Spread the whipped feta on a serving platter, then top with the roasted carrots. Garnish with fresh herbs for an added touch.
